Bajra Til Tikki Recipe | Pearl Millet Sesame Tikki Recipe | Sajjala Tikki

Bajra Til Tikki was often made by mom during winters . Recently I was in Bombay and mom made these for me. I wanted to share this healthy sweet recipe with you all.



Ingredients:
  1. Bajra flour - 2cups 
  2. Grated Jaggery - 1cup
  3. Sesame seeds - 1tbsp
  4. Oil as required
  5. 2 cups water


Method :-


  1. Add grated  jaggery in 2cups of water and let it stay for 10 minutes , once its completely mixed with water . strain it and keep the Jaggery water aside.
  2. In a bowl take Bajra flour , add Jaggery water and sesame seeds .Mix it well . The Consistency of this mixture should be dough like .
  3. Divide the dough into small balls and press it into round circles.
  4. Heat oil in a kadai/Wok for deep frying on medium flame.
  5. Fry Bajra balls in kadhai  on a medium flame. Cook till both sides become brownish.
  6. Serve it hot.This can be even stored and it stays fresh for 3 to 4 days.

Kharbuje ke Beej ki Barfi | Melon Seeds Sweet | How to make Melon seeds sweet

My mom made this Melon seed barfi on Janmasthmi recently its healthy and amazing in taste and a must try.






Ingredients :-

  1. 1 cup Melon seeds
  2. 1/2 cup Sugar
  3. 1/4 cup water
  4. 1/2 tsp Ghee/ Clarified butter



Method:-

  1. Dry roast the Melon seeds in a pan. Grind it in a mixer and keep it aside.
  2. In a pan add 1/4th cup water and sugar on a low flame till sugar is mixed properly with water. you will know its done you would see bubbles in the syrup.
  3. Add the grinded melon seeds to this mixture and stir it properly. Once the mixture starts sticking to the pan , turn off the flame.
  4. Take a plate add 1/2 tsp of ghee on it and spread it properly. Equally spread the melon seed and sugar mixture on this plate let it cool for 10 minutes .
  5. Now cut it in square or any shape you desire.
  6. Melon seeds Sweet/ Barfi is ready to be savored.

Rice Kheer is an Indian version of rice pudding cooked with milk and sugar, flavored with nuts and saffron.It's a  Classic!! and  can be made for any festival or celebration or also as a sweet dessert which you can serve after meals. this is quick and easy recipe and does not demand much cooking skills. I made This Rice Kheer for Teej Festival :) 

Ingredients :-


  1. 2 tbsp of Basmati Rice
  2. 1/4 tsp of Kesar
  3. 4 Green Cardamon/ Choti Elaichi
  4. 1/4 tsp of Ghee
  5. 1 1/2 liter Milk
  6. 4 tbsp of Sugar
  7. 2 tbsp of Chopped Almonds



Method:-



  1. Wash and soak the rice in plenty of wer for 10 minutes . drain.Keep aside
  2. Pound cardamom  and Saffron in fine powder and keep it aside.
  3. Heat 1/4 tsp of Ghee in a heavy bottomed vessel , add soaked rice and cook for a minute
  4. Add milk and bring it to boil , reduce heat and cook till the mixture is reduced to 1/3 rd of the quantity.
  5. Add sugar and cook for 10 minutes and low the head.
  6. Add cardamom and saffron powder and turn of the heat .
  7. Cool and refrigerate the mixture. Serve chilled garnished with almonds.

Semolina Carrot Cake

I found this healthy and nutritious recipe on a fellow blogger food blog Poonam .It's a change to the usual flour cakes we make and can be prepared in max 40 minutes.I just added raisins to the original recipe.Do try and let me know if you like it too :)



Ingredients :-
  1. 1 cup semolina
  2. 3/4 cup grated carrot
  3. 1 cup yogurt
  4. 1 cup milk
  5. 2 tsp olive oil
  6. 3/4 cup sugar
  7. 1/4 cup blanched almonds
  8. 1/2 tsp cardamom powder
  9. 1/2 tsp baking powder
  10. 10-12 raisins
  11. pinch of salt


Method :-
  1. Preheat the oven at 350 degrees F and grease the cake pan.
  2. Take semolina in a mixing bowl. Add sugar, pinch of salt, oil, yogurt and milk. Mix well. Add shredded carrots and blanched almonds. Again mix this really well. Finally add cardamom powder, raisins and baking powder. Mix gently.
  3. Pour the batter in a cake pan and bake the cake for about 35 minutes.

Meethe Pakode ( Wheat and Jaggery Sweet)

Meethe Pakode or Pue is always made by mom as a Karwa Chauth sweet, although I didn't make it for Karwa Chauth ,I ended up making it for Diwali and it turned out to be real nice .This recipe is by mom where in she uses Jaggery as a sweetener. 

Ingredients :-
  1. 1 cup Wheat flour
  2. 1/2 cup Jaggery
  3. 1 cup water
  4. 1 tbsp of fennel seeds ( Sauf)
  5. oil for cooking

Method :-
  1. Take a bowl, add Wheat flour, Jaggery and water. Mix it well so that there are no lumps in it.Set it aside for 2 hours.
  2. After 2 hours add fennel seeds to it and mix it well.
  3. Take a Wok /Kadhai add enough oil so as to fry the pue.
  4. Once the oil is warm , put one spoon full of mixture to the oil.You can add about 4 to 5 at the same time.
  5. After a minute turn it upside down so that both sides are cooked evenly
  6. You would know the meethe Pakode are ready once its brown in color.
  7. Take it off the pan and serve it.

Shakarkand Halwa ( Sweet Potato dessert)

Shakarkand is and irresistible sweet dish made from a sweet ingredient! try this unique halwa recipe made using sweet potatoes, flavoured with cardamom powder and enriched with raisins and almonds.Sweet potato is usually eaten by Hindu ladies during fast. One can make  this dish with either sweet potatoes or ordinary potatoes.

Boil The Sweet Potatoes


Peel of the skin and grate it. 


Add ghee in a pan and grated Sweet Potato and cook for about 15 mins


Add Sugar and Cardamom Powder and mix well, cook for about 5 more minutes.


garnish it with Raisins and Almonds.


Sweet Potato Halwa is ready.


Recipe Details

Ingredients :-
  1. 2 Shakarkand (sweet potatoes)
  2. 1 cup sugar
  3. 3 tbsp ghee (clarified butter)
  4. 7-8 almonds
  5. 10-15 raisins
  6. 1 tsp of cardamom powder
Method :-
  1. Boil shakarkand in a pressure cooker by adding 1 glass of water, up to 2 whistles. Lower the heat and cook for 7 more minutes. Turn off the heat. Open the cooker when steam dies down.
  2. Peel the skin of almonds, chop it and keep it aside.
  3. Peel and grate shakarkand when they are comfortable to touch. Keep aside.
  4. Heat ghee in a pan and add grated shakarkand. Stir constantly on low heat. Fry till golden brown (about 15 minutes).
  5. Add sugar and cardamom powder and mix well.
  6. Turn off the heat when mixture is smooth and cooked. (5 minutes)
  7. Garnish with almonds and raisins

Pumpkin Dessert ( Kasifal Halwa)

Lovely Yellow Orange pumpkin is the fruit of the season and since today its Halloween,
everywhere it is pumpkin-pumpkin all the way. I made This Halwa for Diwali, although a bit late posting it.This recipe is my Mom's version of making Pumpkin halwa, I added Little Saffron strands to it.

Ingredients :-
  1. 1 small butternut squash/pumpkin (4 cups of grated Pumpkin)
  2. 4 tbsp ghee
  3. 1/2 cup sugar
  4. 2 tablespoons raisins
  5. 4 cardamom pods, lightly crushed
  6. 1 cup milk
  7. 6 almonds peeled and finely chopped
  8. 1/2  tsp ( 8-10 strands) of saffron

Method :-
  1. Peel the skin of pumpkin and remove off the seeds and membrane,grate it.You should have about 4 cups of grated squash.
  2. Heat ghee in wide pan, add the grated pumpkin. Cook, stirring for about 2 minutes on medium heat.
  3. Add milk to it and cook for about 10 mins till pumpkin is cooked, stir it in between so that it does not stick to the pan.
  4. Add Sugar, chopped almonds , raisins and Cardamom , mix it well an let it cook for about 10 mins till all the milk has been absorbed by the grated pumpkin and its no longer watery.
  5. Soak Saffron strands in 1 tbsp milk for 15 mins.
  6. Once cooked garnish it with soaked saffron strands, serve it hot.

Wheat , Almond and Honey Cake

I wanted to make since many days and finally I made it.This cake is made of Wheat and I added honey to make it sweet so its  healthy and won't make  us lot guilty when we eat it. Here goes the recipe for it.


Ingredients :-



  1. 2 Cups of whole Wheat flour
  2. 2 eggs
  3. 1 1/2 cup of milk
  4. 2 tbsp baking powder
  5. 1 cup Honey
  6. 6  - 7 peeled and finely chopped
  7. 10- 15 Raisins
  8. 2 tbsp vanilla essence
  9. 1 tbsp of salt
  10. 1/4 cup of Butter

Method :-

  1. Take a bowl and beat 2 eggs 
  2. Add 2 cups of wheat flour in it and mix it properly.
  3. Add 1 1/2 cup of milk to this mixture and mix it well.
  4. Add Salt, Honey, Vanilla essence, Raisins and Butter and mix it well .
  5. Add chopped Almonds to this mixture.
  6. Coat the over tray with Butter or oil and add this mixture to it 
  7. Heat the over at 375 Degrees and let it Bake it for about 35 minutes.
  8. Once done we will do a knife test, take a knife and insert into the cake if it comes out plane our cake is done

Semolina Sweet ( Suji ka Halwa)

Suji Ka halwa is very popular dish among all Indians, this is simplest and easy dessert one can make for any occasion and moreover the ingredients required to make it are all so easily available in our house .so here is the recipe for it.
Ingredients :-
  1. 1 Cup Rawa/Suji ( Semolina)
  2. 2 1/2 water or milk
  3. 1/2 cup Ghee (Clarified butter)
  4. 1/2 cup Sugar
  5. 4 - 5 Almonds
  6. 7-8 Raisins
  7. 1 Tablespoon of Elaichi (Cardamom) Powder
Method :-
  1. Soak almonds in 1/2 cup water and keep it aside.
  2. Take a Kadhai (Wok), add Suji to it and roast it for about 10 mins on a low flame till it gets little brown, keep on stirring it continuously else Suji will burn.
  3. Now add Ghee, sugar, cardamom powder and raisins to it.
  4. Roast the Suji till it turns light golden in colour and one can smell the aroma of the roasted suji. 
  5. Once the suji is roasted add  milk/water to it , and keep on stirring it on a low flame. See to it no lumps are formed while mixing suji and milk.
  6. Keep on stirring the mixture till you get a thick halwa like consistency. 
  7. Now peel the cover of water soaked almonds and chop it to pieces.
  8. Garnish Suji halwa with chopped almonds and serve it hot.
