Healthy Chutney for Dosa's and Idlis

Its been months since I posted any new recipe , finally I decided to post this amazing tangy ,healthy chutney recipe which can be had with Dosas  , Idlis and much more.

Ingredients :-
  1. 2 medium size tomatoes
  2. 2 medium size onions
  3. 100 gms of cilantro / corainder
  4. 7-8 pods of garlic
  5. 2 spoons of grated ginger 
  6. 1 tbsp of oil
  7. salt as per taste
  8. 10-12 curry leaves

Method :-

  1. Wash all the vegetables properly and chop it into big chunks ( as we will make it into a soft paste later using a mixer)
  2. Add  oil in a pan and put all the veggies in it.
  3. On a medium flame, keep on stirring it frequently so as the veggies don't get burnt .
  4. let it get cooked for about 15 minutes.Add salt to this mixture.
  5. Now keep it aside for a while and let it cool down . Once done then make a soft paste of the veggies using a mixer.
  6. Our healthy tangy chutney is ready to be relished

Guacamole

I have been to few Mexican places around Boston and tasted this wonderful Avocado Dip, "Guacamole" .It has  creamy and tangy flavour to it and  made from ripe Avocados.I searched the Internet for its recipe and found quite a many I tried out this one and it came out amazing.Its a must try if you haven't tasted it yet.


Ingredients :-
  1. 2 ripe Avocados
  2. 1 large tomato, diced
  3. 1 Onion, finely chopped
  4. 2 jalapeneos finely chopped
  5. 2 tbsp lime juice
  6. 1/2 tsp roasted cumin seeds
  7. 1/2 cup chopped coriander leaves
  8. Salt to taste
  9. Coarsely-ground pepper to taste
  10. Corn chips or Corn Tortillas
Method :-
  1. In a large bowl, combine tomato, onion, jalapeno, and lime juice, set it aside.
  2. Dice the avocado and  mash it a bit, add to the tomato mixture, gently stir together.
  3. Add cumin seeds, cilantro, salt, and pepper to the tomato/avocado mixture; stir until blended.
  4. Set at least 10 minute for the flavors to blend before serving.
  5. Serve with your favorite chips.

Mint Coriander/Cilantro Chutney

Mint Coriander is a lovely chutney made of cilantro and mint , it can be used on sandwich can be had with dosas idlis, here is the recipe for it


Ingredients :-
  1. 1 cup fresh chopped mint leaves
  2. 1 1/2 cup fresh chopped coriander/cilantro leaves
  3. 2 green chili chopped
  4. 1/2 inch ginger
  5. salt  as per taste
  6. 1 tbsp lime juice
  7. 1/4 cup water

Method :-
  1. In a food processor, combine the cilantro, mint leaves, ginger,chili and water . Process to a fine paste, adding enough water to achieve a thick sauce.
  2. Mix salt and lime juice in the chutney.
  3. Keep in an airtight container in the refrigerator.

Tomato Salsa

I am sure all of us love the salsa sauce that we eat with Tortilla chips. Well this is it. Home made tomato Salsa .This recipe is contributed by Ankur, Thankyou so much for taking out time and writing it down :) .
Ingredients :-
  1.  3 fresh tomatoes
  2. 1 small spicy red or green pepper
  3. ½ red onion
  4. 3 tbsp olive oil
  5. juice from half a lemon
  6. salt and pepper
  7. coriander leaves
Method :-

  1. Slice the tomatoes first and then chop them taking out the seeds
  2. Chop the onions finely.Also deseed and chop the pepper. Make sure to wash your hands after chopping to avoid burning your eyes with the juice of the pepper.
  3. Now chop the coriander and mix the onion, the green pepper and the coriander with the tomatoes.
  4. Squeeze the lemon juice and pour over the vegetables in the bowl. Then add the olive oil, salt and pepper.
  5.  Blend all the ingredients together, until well mixed.
  6. Taste the salsa and if necessary add salt and pepper. Its ready to serve now.Also, once the above blend is ready it can also be very very lightly blended in a mixer. If not it could be eaten in the above raw preparation.

Avocado Chutney

I bought one ripe Avocado from an Indian grocery store yesterday.Other day when I had visited a Mexican restaurant they served this Dip called as guacamole which was very tasty, so I thought of making something similar,while  on my lookout for a Avocado Dip recipe on the internet I came across an Indian version of it and tried it.The result was good the Avocado Chutney came out to be real tasty and it is with that Indian spicy zing :)


Ingredients :-

  1. 1 Avocado
  2. 1  large onion
  3. 5-6 green chili
  4. 7-8 Curry Leaves
  5. 1/2 cup Cilantro/coriander leaves
  6. 2 tbsp Lemon Juice
  7. 1/2 cup Water
  8. 1 tbsp Oil
  9. Salt to taste

Method :-

  1. Prep the Avocado - Halve and pit the avocado . Then scoop out the flesh with a spoon if it is ripe , if not peel the avocado after removing the seed and the chop it into small pieces.
  2. Heat oil in a pan,a dd chopped avocado, onions, curry leaves and green chili, cook it till  the onion pieces turn translucent.
  3. Grind this in a blender along with chopped cilantro, lemon juice, salt and a little water to make a thick paste.
  4. Serve  with any of the Indian savory snacks, dosa, idly or roti.

Tomato Hyderabadi Chutney

This is a tangy and spicy tomato chutney and a famous Hyderabadi accompaniment Though a very simple recipe, this chutney is lip-smacking yummy.

Ingredients :-
  1.     6 tomato
  2.     1 tsp cumin seeds
  3.     5 garlic cloves
  4.     4 dry red pepper
  5.     2 tsp red chili powder
  6.     8 curry leaves
  7.     2 tsp mustard seeds
  8.     salt to taste
  9.     1 tbsp oil

Method :-
  1. Chop the tomatoes and set aside.
  2. In a pan/wok add oil once its warm, add  mustard, cumin, dry red chilies and curry leaves.
  3. When the mustard seeds pop, add garlic cloves, cook it for about 2 minutes.
  4. Add chopped tomatoes.
  5. Next add the red pepper powder and salt. You can add a little water if tomatoes are not very ripe,
  6. but if you are cooking with red ripe tomatoes, skip the water. Now let it slow cook on a low flame for a long time. 
  7. Slow cooking is an important part of the recipe, this process makes the tomatoes infuse with spices and form a
  8. concentrate.Make sure you stir often to avoid it sticking to the bottom of the pan.
  9. When the oil in the dish starts to rise on top, you know the chutney is cooked.

Raw Mango and Onion Chutney

This is a tasty tangy raw mango onion pickle (originally a Gujarati recipe ) which my mom always prepared in summers, its a must try :)
Ingredients :-
  • 1/2 cup grated raw mango
  • 1/2 cup grated onion
  • 2 tbsp grated jaggery(gur) or 1 tablespoon sugar
  • 1/4 tsp black salt
  • 1/4 tsp roasted cumin seeds powder
  • 1/4 tsp chilli powder
  • salt to taste
Method :-
  • Mix all the ingredients in a bowl.
  • Keep aside till the jaggery melts.
  • Cover and keep refrigerate till required
  • Serve the chutney with lunch everyday.This lasts for up to 3 days if refrigerated.
