Before pouring milk into a pot for boiling rub butter along the top edge and inside lip of the pot. When the milk foams up, it will stop over spilling when it hits the butter.

Use of Kitchen Scissors
Most Indian dishes require the use of freshly chopped coriander leaves as a garnish. Use the scissors to chop fresh mint, chilies and coriander finely and without any mess.
Remedy for Salty Curry
Wash a potato. Cut into two. Place a the two halves of the raw potato in the curry and it will absorb the extra salt.
Cauliflower Tomato
I made this cauliflower dry curry and it came out really good. The blend of ginger, garlic, cumin add flavor to the cauliflower and makes it so tasty. Here is the output of the dish that I tried.I hope you like it too.
Ingredients :-
- 1 medium sized cauliflower
- 3-4 garlic flakes finely grounded
- 1 tbsp ginger finely grounded
- 2 medium sized onions finely chopped
- 2 big tomatoes finely chopped
- 1/4 tsp turmeric powder
- 1 tsp red chili powder
- 1/2 tsp coriander powder
- 1/2 tbsp cumin seeds
- salt to taste
- 1 tsp of garam masala powder
- 1 tbsp oil
- chopped fresh coriander leaves for garnish
- 1 tbsp of ketchup (optional)
- 1/4 glass water
Method :-
- Heat 1 tsp oil in a pan and add the blanched florets and stir fry for 4-5 mins continuosly till you get a light golden color.Remove and keep aside.
- In the same vessel add 1 tbsp oil and add cumin seeds, garlic and ginger and fry for 10-15 seconds.Now add the chopped onions and fry till they are golden brown in color
- Add the tomatoes and cook till for about 5 minutes by covering it with a lid.
- Add salt, coriander powder, turmeric powder and chili powder to this mixture, cook it for about 5 minutes on a medium flame.
- Add cauliflower florets to this and stir it well now add 1/4 glass of boiled water and ketchup (optional) .Let it cook for about 10 minutes on a low flame by covering it with a lid.Do stir it in between.
- Add garam masala and cook till you get the desired gravy consistency.
- Garnish with chopped coriander leaves.

Beetroot Dry Recipe
Beetroot Dry Recipe Is quick and nutritious, can be had as a salad or as a dry vegetable with chapati.
Ingredients :-

- 2 medium size Beetroot
- 2 Green chilies
- 1/2 tsp Turmeric powder
- 4-5 Curry leaves
- 1/2 tsp Mustard seeds
- 1/2 tsp cumin seeds
- 1/2 tbsp oil
- 1/2 tsp garam masala
- 1/2 tsp coriander powder
- 1/4 glass of water
- Salt – to taste
- Peel the beetroot, grate it and keep it aside.
- Cut the green chili into two or three pieces and keep it aside.
- Take a pan and heat with oil.
- Add mustard seeds and Cumin seeds.
- When they start to crackle add curry leaves.
- Then add beetroot, green chili, turmeric powder, salt, coriander powder and garam masala.
- Stir it well and add 1/4 glass of water.
- Close with a lid and cook on low flame for about 10 minutes till beetroot is cooked
- Beetroot sabzi is ready.
- Serve with plain white rice, chapati or it can be had as a salad too.

Healthy Tomato Soup
Tomato Soup is a wonderful and its ready in a jiffy and acts as a lovely side-dish or appetizer. I learnt this from my mom and had been having it since childhood, hope you all give it a try and like it as well.
Ingredients :-

- 2 large ripe tomatoes
- 1 large carrot
- 1 apple
- 1 capsicum or bell pepper
- 1 onion
- 2 cups of water
- 3 cloves garlic
- 1 tablespoons ghee (clarified butter)
- 1 teaspoon of cumin seeds
- salt to taste
- 1 teaspoon pepper
- 2 tablespoons chopped fresh cilantro
- Cut Tomatoes, Carrot and Capsicum into small cubes, Remove the skin of Apple and cut into small cubes.
- In a pressure cooker add all of above vegetables and fruit and mix it with 2 cups of water and boil it for about 3 whistles.
- Keep it aside when done.
- In a pan add 1 table spoon of oil, cumin seeds, finely chopped garlic cloves and grated onion and stir it for about 2 minutes.
- To this add our boiled vegetables and mix it well.
- Add salt and pepper to this mixture.
- Cook it on a slow by covering for about 10 minutes.
- Garnish it with Fresh Cilantro.
- Our Tomato soup is ready.

Methi Matar with Paneer sabzi (Fenugreek , peas and cottage cheese vegetable)
Ingredients :-
- 1 bunch fenugreek leaves, finely chopped
- 1 cup peas, shelled, boiled till soft, drained
- 1 onion, chopped
- 2-3 green chillies
- 1 tsp. garlic chopped
- 1 tsp. ginger chopped or grated
- 1 cup soft lowfat paneer or silken tofu
- 1 cup milk
- 1 tsp. butter
- 1/4 tsp. cumin seeds
- 1/ tsp. sugar
- salt to taste
Method :-
- Boil fenugreek greens, with little amount of water in pressure cooker for upto 1 whistle, keep it aside and let it cool.
- Grind onion, paneer, ginger, garlic, chilli in mixier till smooth.
- Heat butter, cumin seeds, allow to splutter.
- Add fenugreek leaves, saute for a minute, add ground mixture and milk.
- Stir and bring to a boil, add boiled peas.
- Add sugar, salt, cook till gravy thickens well.
- Serve hot with rotis or chapati.

- 1/4 Tsp asafotedia powder
- 1 tsp freshly chopped ginger
- 1/4 Tsp Dhania Powder
- 1/4 Tsp Amchoor Powder (dry Mango Powder)
- salt To Taste
- 2 Tbsp Oil
Method :-
- Cut Cauliflower into florets, clean it properly and boil it in pressure cooker up to 1 whistle .
- adding 2 tablespoon of water, keep it aside.
- Heat oil in a pan ,after it is hot ,add cumin seeds, asafotedia powder and Ginger, stir it for about 1 minute .
- now add chopped onions & sauté till it turns light brown,add tomatoes and cook till onions & tomatoes together form a fine paste – add little salt and turmeric powder,so the onions will be cooked faster .
- Now add the Capsicum strips, stir for few minutes,add all spices ,and cook in a low flame till the vegetables are cooked.
- Now Add boiled Cauliflower in this mixture.Sir well and cook it for about 5 minutes on a slow flame.
- Our Cauliflower Capsicum Sabji or Gobi Capsicum Sabji is ready to be served.

Bell-pepper Potato and Onion dry vegetable (Shimla Mirch Aloo Sabzi)
This is a popular Indian recipe served with chapatis / rotis.Potato adds a unique taste to this vegetable and the aroma of capsicum and onions is sure to lure you.

- 2 Capsicums
- 1 Potato
- 1 Large chopped onion
- 1/2 tsp Turmeric powder
- 1/2 tsp Red chilli powder
- 1/2 tsp dry mango or amchur powder
- 1/2 tsp coriander powder
- Oil for cooking
- Salt to taste
- 1 teaspoon cumin seed
- Wash Capsicum, Potato and Onion into vertical pieces.
- Heat oil in a pan and fry onions it till it turns golden brown, take it out in a bowl.
- Repeat the same process with potatoes and keep it aside
- Add Cumin seeds to oil and let it splutter add chopped capsicum to this, sprinkle salt and turmeric powder on it.Stir it well and cook it covering with a lid for about 5 minutes till it becomes tender.
- Add fried onions and potatoes to this and stir it well.
- Add Dry Mango powder, red chili powder and coriander powder to this, mix it well and cook it for about 5 minutes
- Serve hot with Rotis.
Palak Pratha (Spinach Bread)

Palak paratha recipe is a healthy variation of paratha.It is made with fresh Spinach leaves and whole wheat flour
and can be served with curry, pickle or fresh yogurt.
Ingredients :-
- 2 cups whole wheat flour
- Fresh spinach leaves finely chopped - 2 cups.
- oil or melted butter
- salt - 1/2 teaspoon.
- Cumin powder - 1/2 tsp.
- Green chili - 1 finely chopped
- asafotedia powder - 1/4 teaspoon
- lemon juice - 2 tablespoon
- water for forming dough.
- ginger finely chopped - 1 tablespoon
- Wash Spinach leaves and chop it finely.
- In a bowl, add flour, salt,chopped spinach leaves,Cumin powder, green chili, asafotedia powder, 1 tablespoon of oil and Lemon juice.
- Add water little by little and from dough. Knead well, Cover and leave aside for 10 minutes
- Knead again and then make 6 round balls.
- Take each ball, dip in dry flour. Sprinkle a little flour on the board. Place the dough ball on it and roll out into a thick round.
- Heat girdle. Put the round on it. Cook for 5-8 seconds. turn again. apply little oil.
- Cook on both the sides adding a little oil. Both the sides should have brown spots on them.
- Serve hot with any curry,pickle or yogurt.

Fried Okra and Gram flour (Besan Bhindi Sabzi)
Ingredients :-
- 500 gm bhindi
- 1/2 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 2 teaspoon coriander powder
- 5 tablespoon besan ( gram flour )
- 1 tablespoon lemon juice
- Oil for frying
- Salt as per taste
- 1/2 teaspoon amchur powder ( dry mango powder)
- 1/2 teaspoon cumin seeds
- 1 teaspoon sesame seeds
- 1/4 teaspoon asafotedia powder
Method :-
- Wash Bhindi and dry them off, divide it to lengthwise sections.
- Mix all the ingredients in a bowl except cumin seeds and asafotedia, to this add 1 tablespoon oil.
- Add oil in a pan to this add cumin seeds and asafotedia, now add bhindi to this and stir it for a while, cover it with a lid for 2 minutes and let it cook.
- Sprinkle the mixture in the bowl over Okra, cover it with a lid for about 2 minutes.
- Now open the lid and stir it and let it cook for about 10 minutes on a gentle flame.
- Serve hot as a side dish with rice / chapati / rotis.

Carrot Tomato Salad
This is a tasty salad recipe made from carrot and Tomatoes.
Ingredients :-
- 2 small carrots
- 1 tomato
- 5-6 curry leaves
- 1 green chili finely chopped
- green coriander for garnish
- 1 teaspoon oil
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon asafotedia
- 1/4 teaspoon sugar
- salt as per taste
Method :-
- Clean the carrots and shred it.
- Cut tomatoes into small pieces
- Add oil in a pan, once its heated up add cumin seeds and asafotedia.
- To this add curry leaves and green chilies
- Add carrot to this mixture and stir it for 2 minutes.
- Add tomatoes and stir it for about 1 minute, to this add sugar and salt.
- Garnish it with freshly cut coriander leaves.
