Carrot and Peas Veggie ( Gajar Matar Sabzi)

Carrot and Peas is quite a popular sabzi which is made in north India .It's tasty and very easy to make.Hope you give it a try and like it too.

Ingredients :-

  1. 200 gms Carrot ( 2 cups of Carrot)
  2. 100 gms Peas ( 1 cup Peas)
  3. 1/2 cup fresh Coriander leaves
  4. 1 tsp grated Ginger
  5. 1 green chili finely chopped
  6. 1/2 tsp Cumin seeds ( Jeera)
  7. 1/4 tsp heeng ( asafotedia)
  8. 1/2 tsp coriander powder ( Dhaniya Powder)
  9. 1/2 tsp turmeric powder ( haldi powder)
  10. 1/2 tsp red chili powder 
  11. 1/4 tsp garam masala
  12. 1/2 tsp dry mango powder ( amchoor powder)
  13. salt as per taste
  14. 1/4 cup water
  15. 1 tbsp oil


Method :-
  1. Wash Carrots and chop it into small pieces, wash coriander leaves and keep it aside.
  2. Add oil in a pan , once warm then add cumin seeds, heeng and ginger , saute it for a minute on a slow flame.
  3. Add chopped carrots , peas salt and Turmeric powder and saute it for 2 min.
  4. Now add water and close it with a lid for 5 minutes.
  5. Once cooked add Coriander powder , red chili powder, garam masala and Amchur powder, mix it well .Cook it for 2 minutes.
  6. Garnish it with Coriander Leaves.
  7. Gajar Matar is ready .
  8. Enjoy it with chapatis.

Masala Bhindi / Lady's finger

INGREDIENTS :-
  1. 500 gms lady's finger cut length wise
  2. 2 tomatoes - finely chopped
  3. 2 big onions - cut length wise
  4. 1 spoon ginger paste
  5. 1 spoon garlic paste
  6. 1/2 tsp of jeera / cumin seeds
  7. 2 green chilli chopped length wise1/2 tsp chaat masala
  8. Salt as per taste
  9. 1 tsp red chili powder
  10. coriander - garnishing
  11. 4 tbsp of oil

METHOD:-





  1. Cut the top and tail of the lady's finger and slit it length wise
  2. Heat oil in a wok/ deep frying pan and fry the lady's finger till crisp.
  3. Heat a little oil in a pan and add jeera , onion green chilli  and fry till the onion turns crisp brown.
  4. Then add ginger paste
  5. Add finely chopped tomatoes , chaat masala , salt , red chilli powder and fry.
  6. When the tomatoes are properly cooked , add  garlic paste and cook for about 2-3 minutes.
  7. Then add the deep fried lady's finger to the above prepared masala and cook for few minutes.
  8. Garnish with finely chopped coriander leaves before serving.

Healthy Chutney for Dosa's and Idlis

Its been months since I posted any new recipe , finally I decided to post this amazing tangy ,healthy chutney recipe which can be had with Dosas  , Idlis and much more.

Ingredients :-
  1. 2 medium size tomatoes
  2. 2 medium size onions
  3. 100 gms of cilantro / corainder
  4. 7-8 pods of garlic
  5. 2 spoons of grated ginger 
  6. 1 tbsp of oil
  7. salt as per taste
  8. 10-12 curry leaves

Method :-

  1. Wash all the vegetables properly and chop it into big chunks ( as we will make it into a soft paste later using a mixer)
  2. Add  oil in a pan and put all the veggies in it.
  3. On a medium flame, keep on stirring it frequently so as the veggies don't get burnt .
  4. let it get cooked for about 15 minutes.Add salt to this mixture.
  5. Now keep it aside for a while and let it cool down . Once done then make a soft paste of the veggies using a mixer.
  6. Our healthy tangy chutney is ready to be relished

Wheat Banana and Dates Bread

I tried baking other breads at home twice before this but it never came out good to post on the blog , I thought of trying once more and this time results were good .My banana bread is not only healthy tasty and sugar free but tastes good as well.The Dates and Banana  which I added in the bread made it sweet hence I added no sugar to it.







Ingredients :-
  1. 2 cups of Wheat Flour
  2. 1 cups of mashed Banana
  3. 1 tsp of baking powder
  4. 1 tbsp of Eno ( Fruit salt)
  5. 1/2 tsp of salt
  6. 1/2 tsp of Cinnamon powder
  7. 7-8 chopped dates
  8. 1 tbsp of sesame seeds
  9. 1/2 cup water
  10. 2 tbsp of Vanilla essence








 Method :-
  1. Mash the banana and keep it aside.
  2. De seed the Dates , chop it and keep it aside.
  3. Take a bowl to this add Wheat flour, baking soda, cinnamon powder, salt  and vanilla essence.Mix it well.
  4. Add mashed Banana and Dates to this mixture, give it a stir.
  5. Finally add water and Eno to this mixture and mix it well.Your dough would rise a bit by addition of water and eno.
  6. The Dough will be a bit hard.Put this in a greased pan and sprinkle sesame seeds on it .bake it for 40-50 minutes till the crust of bread becomes golden brown.
  7. Insert a knife at the center and it should come clean.
  8. Let it cool completely and then cut it into slices.

Baked Tomato and Corn Soup

Valentine's day table arrangement at home
A very Happy Valentine's day to all my friends, yesterday was kind of busy day for me .I cooked decorated  the  house and arranged  the table for both of with with little candles in center .When Shivam came home he was so surprised :). I had my part of surprises too with valentine's day gifts .We had a good time taking pictures talking and enjoying our food.
I made this baked Corn tomato soup yesterday along with pasta , kidney bean salad and chocolate cake.I will be posting other recipes soon.
 Baked Tomato and corn soup is creamy and delicious the corn in the soup adds body to the soup so you don't have to add any cream to it .The combination of tomato and corn is just amazing.Give it a try I'm sure you won't have your tomato soup any other way after this :).
I made this soup yesterday along with pasta , kidney bean salad and chocolate cake.I will be posting other recipes soon.





Ingredients :- 
  1. 7- 8 tomatoes
  2. 1 cup of corn
  3. 5-6 cloves of garlic finely chopped
  4. salt 
  5. pepper
  6. 1 tbsp of oil
  7. Cilantro for garnishing
  8. 2 green chili finely chopped






Method :-
  1. Cut the tomatoes into halves , drizzle a little oil on the baking plate and place the tomatoes on it with cut side on the top.
  2. Drizzle little oil and salt on it and bake it at 350 degrees for about 30 minutes till tomatoes get little blackened.Take it out , let it cool down and then blend it into a puree.
  3. Take a cup of corn seeds ( you can either use frozen ones or the fresh ones and cut the corn kernels off the cob ) .blend it into a puree, add little water if required.
  4. In a pan add a tbsp of oil , once warm add the chopped garlic and let it simmer for about a minute.Now add both corn and tomato puree to this along with green chili , mix it well .
  5. Let it simmer on a low flame for about 15-20 minutes.Add water for desired consistency.
  6. Add salt and freshly ground pepper .garnish it with Freshly chopped Cilantro , Serve it Hot.

Bell Pepper with Tomato and Cottage Cheese ( Paneer)

Bell Pepper/ capsicum add zing to any veggie whether its pasta , eggs or anything. I tried making Bell pepper with tomato and Paneer / cottage cheese minus the onion and it came out pretty well.I just simply loved the color of my veggie :) .Here is the recipe for it.








In a Pan add oil, once warm add cumin seeds, minced garlic and ginger and 1 green chili chopped and cook it for about a minute.


Add chopped Bell pepper along with 1 chopped tomato and  spices .Cook till both veggies are cooked.

Add Paneer to this and mix well.


Our sabzi is ready.

Recipe Details :-



Ingredients :-
  1. 100 gms of Paneer / Cottage Cheese cut in cubes.
  2. 2 medium sized Capsicum chopped
  3. 1 tomato chopped
  4. salt to taste
  5. 1 tbsp of oil
  6. 1 tsp of cumin seeds
  7. 2-3 garlic cloves minced
  8. 1 tbsp of grated ginger
  9. 1/2 tsp of turmeric powder
  10. 1/2 tsp of chili powder
  11. 1/2 tsp of coriander powder
  12. 1/2 tsp of  garam masala




Method :-
  1. In a pan add oil , once warm add cumin seeds, green chili , garlic and  ginger, cook it for about a minute.
  2. Add chopped Tomato and Capsicum to the mixture along with all spices, let the veggies get cooked.
  3. Once add Paneer cubes to this .Serve it hot with chapatis.

Bell pepper and Gram flour vegetable (shimla mirch and besan sabzi )

Shimla Mirch as it is called in Hindi or Bell Peppers in the West or Capsicum in India, Australia, Malaysia etc all mean the same vegetable which cooks in minutes and is used in a variety of dishes in everyday life from salads and soups to Paneer.Following is one a bell pepper recipes with addition of different flours.This is basically a Gujarati dish which My mother makes often and one amongst my favorite bell pepper veggie.






Ingredients :-
  • 1 tablespoon besan ( gram flour)
  • 1 tablespoon wheat flour
  • 1 tablespoon jowar flour
  • 4 medium sized Capsicum chopped into pieces
  • 2 tablespoons oil
  • 1/2 teaspoon red chilli powder
  • 1 tablespoon of cumin seeds
  • 1/4 tablespoon heeng (asafotedia)
  • 1/2 tablespoon turmeric
  • 1/2 tablespoon coriander powder
  • 1 tablespoon sesame seeds
  • 1/2 tablespoon sugar
  • salt to taste



Method :- 
  • Heat oil in a pan, add cumin seeds and asafotedia, cook it for a minute.
  • Add chopped capsicum, salt and turmeric to this mixture.Cover it and cook on a gentle flame for about 5 minutes, keep on stirring it in between.
  • In a bowl mix gram flour , Jowar flour and wheat flour sprinkle this on the capsicum and cover it for about 2 minutes.
  • Now open the lid and stir it well, to this add coriander powder, chilli powder, sesame seeds and sugar.
  • Stir it well and cook it for about 5 minutes on a gentle flame.
  • Enjoy it with chapatis.

Oats and Spinach Cutlets

I wanted to make Vegetable Cutlets today but the very image of a vegetable cutlet is the one loaded with oil so we might enjoy having it but later feel guilty because the extra calories we would consume with it.Hence Instead of frying it I baked it in the oven.







Ingredients :-
  1. 1 cup oats
  2. 1 potato boiled
  3. 1/4 th cup water
  4. 1/2 onion finely chopped
  5. 1 green chili chopped
  6. 2 cloves of garlic
  7. 1/2 cup peas
  8. 2 cups chopped Spinach
  9. salt
  10. 1/2 tsp of chat masala
  11. 1/2 tsp of red chili powder



Oats Ball before Baking


Method :-
  1. Boil the potato, wait till it cools down, mash it and keep it aside.
  2. In a pan take 1 cup of oats , dry roast it and keep it aside.Keep on stirring it else it will get burnt.
  3. In a Grinder take green chili, garlic cloves and 1/2 cup peas.Make it into a paste and keep it aside.
  4. In a pan add 1 tbsp of oil , add chopped onion to this once translucent add the green peas, chili and garlic clove mixture to it.Mix it well.
  5. Add mashed potatoes to this along with roughly chopped spinach , Mix it well.
  6. Add 1/4th cup of water along with salt, chili powder, chat masala and stir it well.
  7. Finally  add roasted oats to this , mix well.
  8. let it cook for about 2 minutes.
  9. Now once the mixture has cooled down make small balls of it. Grease a oven dish and place all these cutlets on it.
  10. Preheat the oven and then bake these for 20 minutes at 200 degrees.Flip it after 10 minutes so that both sides are baked.
  11. Serve it hot with Chutney or Ketchup.

Lauki / Ghiya Pratha ( Bottle Gourd Indian Flat Bread)

I never used to like Bottle Gourd eventually I acquired a taste for it and started having Ghiya sabzi with Onions and tomatoes and yes of course I like these Ghiya Parathas which I made recently these are not on healthy but flavorful as well.The following is the way my mom makes it.




Ingredients :-

  1. 2 cups of Wheat Flour
  2. 1 tsp salt
  3. 3 tbsp Yogurt
  4. 2 cups of grated Ghiya/ Bottle Gourd
  5. 1 tsp of roasted Cumin seeds
  6. 2 tbsp of finely chopped Cilantro
  7. 3 cloves of garlic finely crushed
  8. 2 green chili finely chopped
  9. oil for cooking
Method :-
  1. Take a bowl and grated ghiya , Wheat flour ,Yogurt, cumin seeds, green chili , garlic and salt, Knead it into a soft dough.You can add 1 tbsp of oil if the Kneaded dough is too sticky.
  2. Keep it aside for 15 minutes
  3. Keep the pan/ girdle for heating in the mean time take a small ball of kneaded dough and roll it into a 6'' inch disc as shown in the figure above.
  4. Now once the pan is hot transfer this to the pan and let it cook for about 2 minutes.
  5. Turn it upside down , you will see small brown spots on it , add around 2-3 drops on the its surface and spread it on the whole disc.Cook it for about 2 minutes on a medium flame.
  6. Turn it around again and apply oil on the other surface as well.
  7. When both sides are cooked evenly, take it off from the pan.
  8. Do the same procedure for the whole dough.
  9. Serve it hot with pickle and curd.

Egg with Spinach and Salsa

I'm so fond of spinach and eggs so I just thought of putting  both together and what came out??  a healthy yummy breakfast .I topped it up with a spoonful of Salsa ,not only looked awesome but tasted heaven :) 



Ingredients :- 

  1. 1 egg
  2. 1 tbsp of oil
  3. 1 large cup of Spinach leaves
  4. 2 cloves of garlic finely chopped
  5. 1 tsp of freshly ground pepper
  6. salt for taste
  7. 1 tbsp of Salsa
  8. 2 toasted bread





Method :-
  1. In a pan add oil and spread it evenly , now add chopped garlic to this and let it cook for about a minute.
  2. Add Spinach leaves along with freshly ground pepper to this .Mix it well and let it cook for about 3-4 minutes.
  3. Add a egg on the spinach leaves and cover it with a lid , once the egg is set in about 2-3 minutes, sprinkle little salt on it and gently transfer it to a plate.
  4. Top it up with a spoonful of salsa and have it along with toasted bread.

Semolina Carrot Cake

I found this healthy and nutritious recipe on a fellow blogger food blog Poonam .It's a change to the usual flour cakes we make and can be prepared in max 40 minutes.I just added raisins to the original recipe.Do try and let me know if you like it too :)



Ingredients :-
  1. 1 cup semolina
  2. 3/4 cup grated carrot
  3. 1 cup yogurt
  4. 1 cup milk
  5. 2 tsp olive oil
  6. 3/4 cup sugar
  7. 1/4 cup blanched almonds
  8. 1/2 tsp cardamom powder
  9. 1/2 tsp baking powder
  10. 10-12 raisins
  11. pinch of salt


Method :-
  1. Preheat the oven at 350 degrees F and grease the cake pan.
  2. Take semolina in a mixing bowl. Add sugar, pinch of salt, oil, yogurt and milk. Mix well. Add shredded carrots and blanched almonds. Again mix this really well. Finally add cardamom powder, raisins and baking powder. Mix gently.
  3. Pour the batter in a cake pan and bake the cake for about 35 minutes.

Chickpeas and Yogurt Raita

I had a Canned box of Chickpeas at home but was lazy to make Chole ( That was the only thing I had tried making out of Chickpeas) .Although Chole is my favorite I wanted to try something new this time so thought of making a Chickpeas Raita which I had at a friends place.It is simple yet tasty and can be prepared in 5 minutes.


Recipe Details :-

Ingredients :-

  1. 1 1/2 cup of Boiled chickpeas
  2. 1 tsp  fennel seeds
  3. 1 tsp mustard seeds
  4. 1 tsp cumin seeds
  5. 1 whole red pepper ( Indian red dry chili)
  6. 1/2 tbsp of oil
  7. 1 tbsp of lime juice
  8. 3/4th cup of yogurt
  9. 2 tbsp of mint chopped mint leaves
  10. 2 tbsp of finely chopped cilantro
  11. salt as per taste



Method :-
  1. Take a pan , add oil to it, once warm add fennel seeds, cumin seeds, mustard seeds and  finely chopped red whole pepper. Cook for about 2 minutes.
  2. In a bowl add boiled chickpeas ( You can either use the canned ones or take chickpeas and soak it over night ( 8-10 hrs ) and boil it ) and add this spice oil mixture to it.Mix well.
  3. Now add yogurt along with cilantro, mint leaves, lime juice and salt.Mix it well.
  4. Our Chickpeas raita is ready.

Egg Bhurji ( Veggie Egg Scramble )

Egg Bhurji is an easy and tasty way of preparing scrambled eggs with onion, tomatoes, capsicum and spices.It uses the most simple ingredients. It is versatile and can be had by itself, or as a side with rice and curry, or as a wrap with chapatis or even as a sandwich with bread. I usually  make this when I run out of time or vegetables.


Things needed.

Mix egg with all veggies and spices.
 
Add oil and spread the mixture on pan.


 
 Mix it well, our Scrambled egg with veggie is ready.

 




Recipe Details :-


Ingredients :-
  1. 1 Egg
  2. 4 tbsp of Onion finely chopped
  3. 2 tbsp of tomatoes finely chopped
  4. 1/2 tsp of Red Chilli Powder
  5. 2 tbsp of capsicum finely chopped
  6. salt as per taste
  7. pepper powder as per taste
  8. 2 tbsp of coriander/cilantro finely chopped
  9. 1 tbsp of oil
Method :-

  1. Wash Onion, tomatoes, capsicum and cilantro,and finely chop them.Take a
  2. bowl, break the egg and mix it well.Add all the veggies , salt, pepper, red chili.
  3. powder and salt.Mix it well.
  4. Take a pan add oil to it, once heated, pour the egg mixture in the pan.
  5. Mix it well and let it cook for about 5 mins , with constant stirring it between.
  6. Our egg Bhurji is ready to be served.

Stir-fried Zucchini

This delicious recipe. It's easy to cook and so tasty, I found this recipe in one of the magazine, and it turned out pretty good.



Cut Zucchini into  1" pieces.


Put the cut zucchini into a large mixing bowl. Add the bengal gram flour, turmeric, cumin and red chilli powders, salt to taste and mix well to coat all the zucchini pieces. Keep aside for later.


 Heat the oil in a deep pan on a medium flame, till hot.Add the cumin and ajwain seeds.


 Add the zucchini and mix well.


Simmer the flame and cook till the bengal gram flour coating is cooked - it will look golden and give off a cooked aroma.



Details of the Recipe
Ingredients:-
  1. 3 large zucchini
  2. 3 tbsp Bengal gram flour (besan)
  3. Salt to taste
  4. 1/2 tsp turmeric powder
  5. 1/2 tsp red chilli powder
  6. 1 tsp cumin seeds
  7. 1 tsp carom seeds (ajwain)
  8. 3 tbsp vegetable/ canola/ sunflower cooking oil

Method :-
  1. Wash the zucchini thoroughly and pat dry. Now cut into quarters lengthwise and then dice into 1" pieces.
  2. Put the cut zucchini into a large mixing bowl. Add the Bengal gram flour, turmeric, cumin and red chilli powders, salt to taste and mix well to coat all the zucchini pieces. Keep aside for later.
  3. Heat the oil in a deep pan on a medium flame, till hot.
  4. Add the cumin and ajwain seeds and cook till they stop spluttering. Now add the zucchini and mix well.
  5. Simmer the flame and cook till the bengal gram flour coating is cooked - it will look golden and give off a cooked aroma. Ideally the zucchini will also be cooked by this time.
  6. Serve hot with Chapatis.
